This post is nothing to do with cards or papercraft. The only way it is connected is that I was cleaning out a drawer trying to find my camera charger. I needed to recharge my camera to take a photo of my last card class.
I get a great satisfaction after a drawer is sorted and I can find everything at a glance, what about you? Anyway I found a very old recipe that I thought I would share. It is a fruit cake recipe and yes everyone has one of these BUT I find I would use this one all the time when I baked. Notice I do say "When I used to bake" Card making seems to take up too much of my time for baking now which isn't a bad thing as full cake tins = empty cake tins = weight gain.
Enough rambling here is the recipe, leave me a comment if you make it.
Sin Free Fruit Cake
Ingredients
500 grams Mixed dried fruit
1 400gram can Mango in Natural Juice (I use Admiral brand)
1½ cups Self Raising flour
1½ teaspoons mixed spice
2 eggs
1/2 cup water
Method
Combine fruit, water, chopped mango with juice in a saucepan. Boil for 1 minute. Allow to cool.
Add beaten eggs, fold in flour gently, bi-carb and spice. Pour into a lined loaf tin. Bake 1 hour at 160℃. Leave stand in oven for 10 minutes. Cool in tin. Enjoy!
